The ravenous king of the seas and oceans, the bluefin tuna is one of the most popular fish in gastronomy around the world and deserves due attention. Riccardo Lucque, course lecturer and founder of the Italian chain of restaurants and bistros La Collezione, is so fond of tuna that he has put it right at the heart of his menu. Like other top chefs, Riccardo values tuna especially for its high quality and delicious-tasting meat. He prefers fresh tuna in the "crudi" version, i.e. in its raw form. Since tuna inhabits, among other things, the Mediterranean shores of the Italian Marche, the region where Riccardo was born, the menu will be full of strong Italian influence and traditional Italian ingredients.
 
For the antipasti, Riccardo will prepare tuna tartare with avocado and romano piadina, a dish that is based on the highest quality raw tuna as the primary ingredient. Riccardo will show you how best to prepare and season the tuna to bring out the flavour of this delicate fish. A course that will take you back to the shores of the Italian Marche with its atmosphere, you will be delighted to prepare it after the course is over. The next course will be a roast tuna. Riccardo will let the characteristic taste of the meat shine through, so the tuna will be served only with a light panzanella salad from the Italian city of Florence, whose taste is very rich despite its lightness. You will be surprised.
Another delicate recipe that Riccardo has prepared for you combines the freshness of tuna with an Italian pasta. Taglierini, originating from northern Italy, are great for seafood-based dishes and are guaranteed to be enjoyed. Tuna steak with broccoli and farro wheat rounds off a menu that will be as royal as the tuna itself.

Riccardo Lucque

Since 1993 Riccardo worked in London, e.g. for Zafferano restaurant. He has become the executive chef of the chain of five Italian restaurants there. Because of his work he moved for a short time also to New York. In 2002 Riccardo came to Prague as head chef of a restaurant called Square. Three years later he opened his first restaurant – Aromi, then La Finestra in Cucina and La Bottega bistros followed shortly.
